Watermelon and Fetta Cheese Salad

INGREDIENTS

  • 1/2 cucumber, quartered

  • 1/2 small watermelon, peeled, deseeded and quartered

  • 200 grams HAPPY VALLEY Feta Cheese , crumbled

  •  1 small bunch of mint, chopped

FOR THE DRESSING:

  • 4 tablespoon olive oil (or oil reserved from the olives)

  • juice of 1/2 lemon

  • salt and freshly ground black pepper

METHOD

  1. Combine watermelon, HAPPY VALLEY Fetta Cheese, cucumber, and mint in a large bowl.

  2. Pour the lemon juice and olive oil over the watermelon mixture and toss gently to coat. Season with salt and pepper

  3. Serve chilled.
